All fruit in the Estate Collection is hand-picked, then sorted by cutting-edge optical technology. This wine is fermented with proprietary native yeast cultivated from the DAOU Estate and made from 100 percent free run juice. Each fermentation is managed with continual phenolic analysis, ensuring an exquisite mouthfeel in each wine.

The Reserve Collection
The Reserve Wine Collection sources grapes from AVAs in Paso Robles that produce the best expression of each varietal. DAOU Partners closely with each Vineyard to ensure the fruit is grown in line with DAOU standards. The wine is produced by DAOU using DAOU proprietary techniques with an ever-vigilant eye on quality.
PATRIMONY ESTATE
The fruit grown on the PATRIMONY Estate produces unfathomably high phenolics, the natural compounds responsible for the composition and marriage of color, taste and texture. This fruit is masterfully guided by Daniel Daou's palate as well as his proprietary fermentation techniques.
